I absolutely love to cook, but it isn’t always my favorite thing to do after a long day at the office. Most weeknights The Hubs and I get home from work late time and we look forward to spending some quality time talking, playing and reading with our kidlets before their bedtime. Once we have them safely nestled into their beds it’s usually well after 8 pm. While we’re both ravenous by that time, neither one of us is in the mood to start thinking about dinner ideas and making a meal that has a long prep or cook time.
That’s why I love #EasyPrepMeals — fast and easy dinners that I can make on nights when I don’t have the time or energy to cook a meal from scratch. I always try to keep my pantry and fridge stocked with some food basics so I can always create a delicious meal on a moment’s notice.
This past weeknight I made an awesome and romantic dinner for The Hubs and I in under 30 minutes with the help of Campbell’s Skillet Sauces. This is a new line of Campbell’s sauces where all you have to do is pick your protein and/or vegetable, add a Skillet Sauce and you can have a tasty and healthy dinner for four (we had enough for leftovers the next night!) on the table in no time at all!
I found Campbell’s Skillet Sauces at my local Stop & Shop in the Boxed Dinner Kits aisle. There are six different Skillet Sauce varieties, Creamy Chipolte, Fire Roasted Tomato, Thai Green Curry, Toasted Sesame, Marsala and Shrimp Scampi, which I chose to use for my meal.
Campbell’s Shrimp Scampi with White Wine and Garlic Skillet Sauce combines crisp white wine with butter, garlic and herbs that creates a versatile sauce to use with seafood, chicken or vegetables and delivers a complex and savory flavor in every bite. For our dinner I put my own touches on the dish by adding onions, cherry tomatoes and fresh herbs. Here’s how I did it:
Shrimp Scampi Pomodoro
Prep time: 10 minutes to shell and devein shrimp & cut onions and tomatoes
Cook time: 15 minutes, mostly pasta cooking time (10-12 minutes)
Campbell’s Skillet Sauces – Shrimp Scampi
1 lb large uncooked shrimp: shelled and deveined
½ cup of cherry tomatoes: washed, dried & halved
¼ cup of onion, diced
¼ cup of fresh parsley or cilantro, chopped
16 oz (1 box) of thin spaghetti, capellini or angel hair pasta
1 Tbsp extra virgin olive oil
After sautéing the onions, tomatoes and shrimp, I added in the Campbell’s Skillet Sauce, added my fresh herbs and in 10 minutes dinner was served!
- Prepare thin spaghetti, capellini or angel hair pasta as directed on box
- Heat oil in large skillet over medium/high heat
- Add shrimp and cook until slightly pink, about five minutes. Remove from skillet and put aside.
- Add onion and sauté until soft and translucent, about five minutes
- Add tomatoes and sauté for about 3 minutes
- Return partly cooked shrimp to skillet and stir in Campbell’s Skillet Sauce
- Heat to a boil, reduce heat and cover for 5 minutes until shrimp is cooked through
- Drain pasta and add to skillet to coat with scampi sauce and sprinkle in ¾ of the fresh parsley or cilantro
- Transfer to serving dish, arranging shrimp and tomatoes on top and garnish with the remaining fresh herbs
- Serve immediately
The Hubs and I were able to sit down have a glass of wine and enjoy each other’s company, share in some laughs and conversation over a delicious weeknight dinner that didn’t take much time or effort to make. Since Stop & Shop had a special going on for Campbell’s, I also picked up the Toasted Sesame Skillet Sauce which I plan on making with some shirataki noodles and stir fry veggies this week for another yummy semi-homemade meal.
Since this meal took no time to prep or cook, I was able to set a nice table to eat with The Hubs via candlelight.
